Ingredients

½ cup sesame seeds

½ cup sunflower seeds

½ cup raw pepitas (pumpkin seeds)

¼ cup ground flax meal (ground flax seeds)

1 tbsp psyllium husk powder

1 tsp fine sea salt

1 tsp garlic powder

1 tsp onion powder

2 tbsp nutritional yeast

½ tsp ground black pepper

¼ cup whole black chia seeds

1 cup boiling water
Directions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine all seeds, psyllium, salt, and spices.
Pour in the boiling water and stir until the mixture thickens and forms a gel-like texture.
Spread the batter very thinly and evenly on the baking sheet, this step ensures extra crispy crackers.
Bake for 45–55 minutes, until the centre feels firm and dry to the touch.
Let cool completely, then break into rustic pieces. Store in an airtight container for up to 1–2 weeks.
