The title of this recipe may sound exotic, but avocado sashimi to us is just another creative way to serve fresh, ripe avocado. Here, thin slices of avocado are topped with a crunchy salsa made with soaked almonds. Drizzled with olive oil, dusted with sea salt and fresh ground pepper, and served with a slice of lemon, this dish is delicious and easy to prepare. Serve it family-style, as part of a Mediterranean mezze, and watch it disappear from the table in no time!
Ingredients

4 ripe avocados

2 tbsp olive oil, divided

1 tsp lemon juice

PRANA unrefined Algarve sea salt, to taste

PRANA organic fair trade whole black pepper, ground, to taste

1 cup cherry tomatoes

1/2 cup PRANA organic raw European almonds

1 clove garlic
-
2 green onions
Directions
Soak the almonds in water overnight. Drain, peel, rinse and coarsely chop them.
Cut the cherry tomatoes into quarters, mince the garlic and finely chop the green onion. I
In a bowl, mix these ingredients together with the soaked almonds, add 1 tbsp of olive oil, and season with salt and pepper.
Thinly slice the avocados and arrange them nicely on a platter.
Mix the remaining tbsp of olive oil with the lemon juice and drizzle it over the avocado. Season with salt and pepper.
Spoon the almond salsa over the avocado.
