Ingredients

1 cup quinoa

1½ cups plant-based milk

2 apples

1½ teaspoons cinnamon

¼ cup maple syrup

A small pinch of salt

⅓ cup caramelized apples

A handful of Prana organic pecans

1-2 tablespoons Prana Italian Organic Hazelnut Butter

A few slices of raw apples

Directions
Peel and dice the apples.
Rinse the quinoa well. Set aside.
In a pot, add the apples, maple syrup, and cinnamon. Bring to a boil, then cook for about 5 minutes over medium-high heat until the apples are nicely caramelized. It’s ready when the sugar begins to crystallize slightly.
Set aside about ⅓ cup of the caramelized apples for topping at the end.
In the same pot with the caramelized apples, add the rinsed quinoa and your choice of plant-based milk. Bring to a boil, then reduce the heat and simmer for about 12 minutes, covering if needed. Add more milk if it evaporates before the quinoa is fully cooked.
Once the quinoa is cooked, remove from heat, cover, and let it rest for about 10 minutes.
Divide into portions and top with the reserved caramelized apples, Granolove - Maple Spice Crunch Organic Granola, Prana pecans, apple slices, and Prana hazelnut butter. You can also drizzle with a little extra maple syrup if you have a sweet tooth!
