1 thick slice of vegan brioche

1/4 cup (60 ml) plant-based milk

1/2 teaspoon maple syrup

1/2 teaspoon potato starch

1/4 teaspoon chia and flaxseed mix

A pinch of cinnamon

A few drops of vanilla extract

1/2 tablespoon coconut oil

Small handful of Prana Granolove

Instructions
Prepare the milk mixture: In a small bowl, whisk together the plant-based milk, maple syrup, potato starch, chia and flaxseed mix, cinnamon, and vanilla until smooth.
Crush the granola: Place a small handful of Prana's Granolove in a resealable plastic bag. Using a rolling pin, crush the granola into fine pieces for a uniform coating.
Dip the brioche: Submerge the slice of brioche into the milk mixture, allowing it to soak for about 15 seconds. Lift the brioche out and let any excess liquid drip off.
Coat with granola: Place the brioche slice into the crushed granola, pressing gently to fully coat both sides.
Cook: Heat coconut oil in a small pan over medium heat. Place the granola-coated brioche in the pan, cooking each side for about 2-3 minutes, until golden and crisp.
Serve: Garnish with fresh fruit and drizzle with maple syrup if desired.
