Crispy, sweet, crunchy and decadent are just a few of the words we could use to describe this delicious, chocolaty granola. If you're looking for the secret to a granola with big, crunchy chunks, just press the mix into compact pieces with your hands before baking, like you would with homemade granola bars. It'll take a little longer to bake, but it's worth it. For an extra decadent version of this recipe, let the granola cool for a few minutes and add some extra chunks of 70% dark chocolate chunks. And while you're at it, why not add some chopped dried fruit and dried coconut strips?
Ingredients
-
2 cups oats, or spelt or rice flakes
-
2 tbsp PRANA organic raw cacao powder
-
1/2 cup PRANA organic raw European almonds
-
2 tbsp PRANA organic coconut oil
-
3 tbsp maple syrup
-
1/2 cup PRANA organic chocolate chunks, 70% cacao
Directions
Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
Mix the oats and the cacao powder. Coarsely chop the almonds and add them to the mix.
In a large saucepan, bring the coconut oil and maple syrup to a gentle boil. Mix well. Add the chocolate and let melt over low heat.
Remove the saucepan from heat, add the oat mixture to the saucepan and toss well so that every piece is coated with chocolate.
Spread n the prepared baking sheet and place in preheated oven for 12 to 15 minutes. Mix with a wooden spoon every few minutes.
Remove from oven and let cool.
If you're feeling extra decadent, add more chocolate chunks and other goodies to the cooled mix.
