Oatmeal is a classic busy-morning, pressed-for-time breakfast! We're always looking for new recipes for breakfast, as well as tips and tricks to make it easier. After all, it's the most important meal of the day! A lack of time or ideas can lead to eating badly, or not eating at all in the morning. You may have heard of overnight oats - they're prepared at night and left for the liquid to absorb so that they're the perfect texture by morning. It's an easy and practical way to make breakfast, and an added advantage is that you can mix it up by adding ingredients you like! The base is made of chia, oats and nut milk. To it you can add cacao nibs, chocolate, spices, yogourt, nuts or maple syrup. When it's time to serve you can also add fresh fruit, coulis, more nuts, or grated coconut. It can also be brought to work or school for breakfast on the go!

1 banana

1 cup oats

2 cups homemade almond milk

3 tbsp maple syrup

1/3 cup PRANA organic finely grated coconut

2 tbsp PRANA organic whole black Proactivchia seeds

1 tsp vanilla extract

1 pinch PRANA unrefined Algarve sea salt

1/4 cup PRANA organic raw cacao nibs

Toppings: 1 diced mango, 1/3 cup melted chocolate, 1/4 cup PRANA organic Classic original coconut strips
Directions
Mash the banana with a fork.
In a medium bowl, mix the oats, almond milk, grated coconut, ProactivChia, vanilla, salt, mashed banana and cacao nibs.
Place the oatmeal in a large Mason jar (or divide it among 4 smaller Mason jars for a to-go version) and place in the refrigerator to sit overnight
Before serving, melt the chocolate
Garnish the oatmeal with fresh mango and coconut strips, and drizzle with melted chocolate.
