Roast Fruit with Ice Cream and Maple-Roasted Nuts

This simple dessert is sure to be a hit! Use your favourite seasonal fruits as well as your preferred spices (cinnamon, cardamom, ginger or nutmeg, all make delicious additions to this recipe). Roasted until soft, these fruits provide an explosion of flavours. Served with a scoop of ice cream and homemade maple-roasted nuts, there's no better way to end a meal. Any leftover roasted fruits (there probably won't be any) can be used the next morning, mixed into oatmeal.

4 pears, sliced

2 apples, sliced

½ cup fresh cranberries

1 cup pineapple chunks

5 to 6 clementines, in segments

Juice of 1 lemon

⅓ cup PRANA organic fair trade cane sugar

½ tsp organic fair trade ground Ceylon true cinnamon

1 pinch of ground cardamom

2 tbsp PRANA organic coconut oil, melted

⅓ cup PRANA organic raw walnuts

3 tbsp maple syrup
-
1 pinch of sea salt

Vegan ice cream, to serve
Directions
Preheat oven to 300°F (150°C).
In a large bowl, mix fruits with lemon juice. Set aside.
In another bowl, mix sugar, spices, and melted coconut oil.
Add to fruits, stirring to coat well.
Pour fruits into a baking dish and bake about 35 minutes, or until fruits are soft.
In a small bowl, mix walnuts with maple syrup and add a pinch of salt. Spread nuts on a baking sheet covered with parchment paper and oven-roast 15 minutes. Let cool.
Serve fruit in individual bowls with a scoop of ice cream on top. Sprinkle with maple-roasted nuts.
