This delicious caramel recipe is 100% vegan. Drizzle it on your favourites like crepes, pancakes, yogurt or ice cream, or dip your apple slices in it! Why not add a teaspoon to your coffee or latte for a little hint of caramel? Hey, it may not be the healthiest of our recipes, but doesn't it feel good to indulge in cruelty-free caramel from time to time?
Ingredients

1 cup coconut milk

1/2 cup PRANA organic coconut palm sugar or PRANA organic fair trade cane sugar

1/2 cup maple syrup

1 tbsp PRANA organic coconut oil

1/2 tsp vanilla extract

1/3 cup PRANA organic raw pecans

1 pinch sea salt
Directions
In a large saucepan, combine all ingredients except pecans and salt.
Bring to a boil and simmer over medium heat until the caramel has thickened.
Remove from heat and add finely chopped pecans and sea salt. Mix well.
Pour the caramel into small glass containers
Store up to 1 week in the refrigerator.
To soften a bit before use, heat in a double-boiler or microwave for a few seconds.
