Nothing says summer like a burger on the BBQ. And portobello burgers are the way to go if you're looking for something thick, juicy, and filling. They're easy to prepare and don't take long to cook. Served with a quick pesto made of kale, basil, and hemp seeds, they're a real treat! Hemp has more than a few nutritional benefits, which makes it a no-brainer addition to this summer dish. Its seeds are a source of protein, minerals, vitamins, and fibre, but most importantly, feature a high concentration of omega-3 and 6 fatty acids! We love to sprinkle them in salads and smoothies, or use them to transform a quick pesto into a nutritional powerhouse.

2 portobello mushrooms

2 tbsp balsamic vinegar

2 tbsp lime juice

2 tbsp olive oil

Drizzle of maple syrup

¼ tsp Provencal herbs

1 clove garlic

Sea salt and ground black pepper

2 burger buns

1 tomato, sliced

A few leaves of Boston lettuce

1 ripe avocado, sliced

3 cups kale, chopped

1 cup fresh basil

2 cloves garlic

¾ cup PRANA organic shelled hemp seeds

¼ cup nutritional yeast

½ cup olive oil
-
2 tbsp lemon juice

1 tsp sea salt

Directions
Kale, Basil & Hemp Pesto
In a food processor, combine kale, basil, garlic, hemp, yeast, lemon juice, salt and pepper, then mix.
Drizzle in olive oil, adding more or less depending on desired consistency.
Rectify seasoning and set aside.
Burger
Mix all the ingredients except mushrooms in a bowl to make a marinade. Place portobello caps in marinade and set aside 30 minutes to 1 hour.
Once mushrooms are ready, cook on barbecue or in a grill pan, 7 to 8 minutes per side until tender.
Slide between burger buns, smother with pesto, and garnish with tomato, lettuce and avocado. Serve right away.
