What more could you ask for? Coconut chips add wow factor to any sandwich, providing a touch of spice and crunch that's impossible to pass up! This filling can also be used to make rolls with nori sheets or rice paper, stuffed generously with your choice of vegetables. 2 cups kale

2 tbsp olive oil

1 tbsp of lemon juice

6 pitas (or rice wraps for a gluten free version)

1 Boston lettuce heart

¼ cup Veganaise

2 carrots, julienned

1 tomato, sliced

A few avocado slices

Mixed sprouts

1 package PRANA Charleston BBQ coconut chips

1 pinch sea salt
Directions
Finely chop kale, combine in a large bowl with olive oil and lemon juice, then massage to soften. Season with salt.
Warm pita breads (or rehydrate rice wraps) and line each one with 2 Boston lettuce leaves. Spread with Veganaise. Add some chopped kale, julienned carrot, sliced tomato, 2 avocado slices, and your choice of sprouts. Top with coconut chips.
Roll wraps and enjoy!
