Pasta salads are a classic pick for lunch, picnics and quick summer suppers. Simple, crowd-pleasing and satisfying, we love to make enough to take along to potlucks or to the office to share at lunch! Making your own pesto at home is super easy. Fresh and fast, it makes a great addition to any salad or sandwich, and an awesome pasta sauce. Using hemp seeds in your pesto is also a great way to add a complete vegetable protein to the mix! This pasta salad is an excellent way to integrate those fantastic little seeds into your diet.
Ingredients

2 cups short pasta

1 small cucumber

12 cherry tomatoes

1 cup pesto

1/3 cup capers
-
3 green onions
-
12 basil leaves

1/3 cup PRANA organic shelled sunflower seeds, toasted
Directions
Cook the pasta in a large quantity of boiling salted water according to the package directions. Drain and rinse with cold water to halt the cooking process.
Cut the cucumber in half lengthwise, and then slice into thin half-moons. Halve the cherry tomatoes and chop the green onions and basil.
In a large bowl, mix all the ingredients for the pasta salad together. Season generously with salt and pepper.
