Fresh, colourful, and full of texture, this orzo salad with strawberries and crunchy granola is anything but ordinary. With the sweetness of fruit, the creaminess of avocado, and a satisfying crunch, every bite is perfectly balanced. Ideal for a light summer lunch or a vibrant side.
Ingredients

2–3 cups spring mix lettuce

1 cup orzo

1 avocado, diced

8–10 strawberries, halved

½ cup asparagus, cut into small pieces

1–2 tbsp fresh mint, chopped

1–2 tbsp green onions, sliced

1 cup Prana Summer Strawberry Granola

3 tbsp olive oil
-
1½ tbsp balsamic vinegar

1 tbsp maple syrup
-
1 tsp Dijon mustard
-
1 small garlic clove, grated (or ½ for a milder flavour)

Salt and pepper, to taste

Directions
In a Mason jar, combine all dressing ingredients. Close and shake well until fully emulsified. Set aside.
Cook the orzo according to package instructions. Drain, rinse with cold water, and let cool slightly. Meanwhile, prepare the fruits and vegetables.
In a large bowl or serving platter, combine the lettuce, orzo, avocado, strawberries, asparagus, mint, and green onions.
Add the granola just before serving to keep it crunchy.
Drizzle with the dressing, toss gently, and serve immediately.
