Sweet, spicy and savoury come together in this wonderful dish!
1 bunch kale
2 tbsp rice vinegar
1 tbsp white wine vinegar
1 shallot, thinly sliced
2 cups PRANA organic non-roasted cashews
2 tbsp PRANA organic coconut oil
1 tsp organic fair trade ground cumin
¼ tsp organic fair trade ground Ceylon true cinnamon
¼ tsp sea salt 1 tsp whole coriander seeds, ground
¼ tsp ground ginger
Chop up the kale and put it in a large bowl. Mix together the rice vinegar, white wine vinegar and shallots. Add the dressing to the kale salad and toss. Set aside.
To prepare the spicy nut mixture, melt the coconut oil, add the cashews and cook over medium heat until the nuts become golden. Add the spices and stir to coat completely. Cook for another 5 minutes over low heat. Let sit for a few minutes.
To serve, place the salad on a plate and cover with the spicy nut mixture.
