It doesn't take long to prepare, so it's perfect when you're short on time. The smoked almonds are absolutely addictive, so consider preparing a double batch to keep on hand as a snack or pre-dinner treat!

15 stalks asparagus

1 cup French string beans

2 tbsp extra virgin olive oil

1 shallot, finely chopped

2 cloves garlic, minced

1 lemon, zest of

sea salt and ground pepper, to taste

¼ cup smoked almonds

2 tbsp extra virgin olive oil

½ to 1 tbsp liquid smoke

1 tsp sea salt

fresh ground pepper, to taste

1/8 tsp chili powder

2 cups PRANA organic raw European almonds
Smoked Almonds
Directions
Steam the asparagus and green beans for a few minutes, but make sure they retain their crunch.
Remove from heat and cut the asparagus in 3 and the green beans in 2 crosswise.
Prepare the smoked almonds as per the instructions below.
In a frying pan, heat the olive oil and add the shallot, garlic, asparagus and green beans. Sauté for 2 minutes and season with salt and pepper.
Toss in the lemon zest and smoked almonds.
Serve immediately.
Smoked Almonds
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Mix the ingredients together in a bowl, add the almonds and toss to coat evenly.
Spread the almonds on the prepared baking sheet and place in preheated oven for 15 minutes, stirring regularly.
Let cool completely before adding to the salad.
