This delicious granola bar makes a perfect "to-go" snack for the whole family. There's probably thousands of varieties of granola bars in grocery stores, and while many may seem like a healthy choice, most aren't as nutritious as they look. Usually, they're packed with refined sugar and bad fats, not to mention chemical additives and artificial flavours. Even when snacking, it's important to choose whole foods and healthy ingredients, and to avoid processed food. Making your own granola bars is a fantastic, inexpensive, and easy way to make sure you're picking a nutritious snack. Oatmeal, puffed rice, flaxseed, chia, crunchy nuts and seeds... maple syrup, nut butter, and chocolate chunks... hungry yet? Granola bars can be made with any combination of grains, nuts, seeds and sweets in your pantry. You probably already have everything you need to make a batch, so get to it!

2 cups oats

1 cup puffed cereal (rice, quinoa or millet)

1 tsp organic fair trade ground Ceylon true cinnamon

¼ cup ground golden flax seeds

2 tbsp PRANA organic whole chia seeds

¼ cup PRANA organic shelled sunflower seeds

¼ tsp sea salt

½ cup tahini (sesame seed paste) or PRANA nut butter of your choice

1 tsp vanilla extract
-
⅔ cup maple syrup
-
4 tbsp dairy-free milk (almond, soy, rice)

¼ cup PRANA organic chocolate chunks, 70% cacao
-
½ cup PRANA organic chocolate chunks, 70% cacao

1 pinch of salt
Toppings (optional)
Directions
Preheat oven to 325°F (160°C). g well.
Line an 8-inch (20-cm) baking pan with parchment paper.
Combine oats, puffed rice, cinnamon, ground flaxseed, chia seeds, sunflower seeds and salt in a large bowl, mixing well
In a smaller bowl, mix tahini, vanilla, maple syrup and almond milk.
Add wet ingredients to dry ingredients and mix well. Add chocolate chunks and stir to combine.
Pour mixture into baking pan and press down with your hands to make even
Bake 25 minutes until golden brown. Let cool completely 10 to 15 minutes (bars will harden as they cool).
Cut bars into squares or rectangles.
Topping (optional)
Place bars on a rack.
Melt chocolate in a double boiler and add pinch of salt.
Generously drizzle chocolate over granola bars and let harden 10 to 15 minutes before serving.
Recipe Note
These bars can be frozen.
