Cashew "Cheese" with Fine Herbs

This cashew cheese recipe is super easy, and great for adults and kids alike! The herbs give a fresh taste. You can switch up the flavours to match your taste! Garlic, green onion, hot spices are all good alternatives that will keep this recipe inventive each time you make it!
1 cup PRANA organic non-roasted cashews
2 tbsp nutritional yeast
2 tbsp lemon juice
2 tbsp water
1 tsp apple cider vinegar
1 clove garlic
½ tsp PRANA unrefined Algarve sea salt
PRANA organic fair trade whole black pepper, ground, to taste
½ tsp fresh basil
½ tsp fresh oregano
¼ tsp fresh thyme
Soak the cashews for 30 minutes, then rinse and drain them.
Put the nuts, nutritional yeast, lemon juice, water, vinegar, garlic and salt in a high-speed blender and mix until smooth and creamy, about 2-3 minutes.
Finely chop the fresh herbs.
Transfer the nut mixture to a bowl and mix in the herbs.
Wrap the mixture in a cheesecloth and squeeze tight. You can also pack the mixture very tightly into a container if you don't have any cheesecloth.
Let sit overnight in the fridge, where it will slowly harden.
Remove from cloth and serve with fresh bread, crackers and grapes.
