Cashew Mint Vegan Tzatziki
A vegan version of the popular sauce!
1 cup PRANA organic non-roasted cashews
4 tsp lemon juice
½ tsp sea salt
¼ cup water
½ bunch fresh mint
½ tsp agave or maple syrup
1 clove garlic
Soak cashews in water for up to 30 minutes. Drain (discarding the soaking water) and rinse.
Mix all the ingredients in a blender until smooth.
Use as a dip, a dressing, a sauce for grilled vegetables or as a spread in your sandwich.
