What's not to love about sweet potatoes? Whether they're oven roasted, puréed, added to a smoothie (yes, sweet potatoes in a smoothie!), or made into fries, we never get sick of them. These oven fries are coated in a mix of tangy mustard and crunchy chopped almonds, the combination of which creates crispy, delicious magic! And you won't feel guilty about gorging on them either. They're the perfect side dish - healthy AND filling!
Ingredients

2 large sweet potatoes

2 tbsp Dijon or old-fashioned mustard

1/2 cup PRANA organic raw European almonds, ground to a powder

1/4 cup finely chopped PRANA organic raw European almonds

1/2 tsp sea salt

Freshly ground pepper

1/2 tsp chili powder
Directions
Preheat the oven to 375°F (190°C).
Cut the sweet potatoes into fries. Bring a large pot of salted water to a boil and blanch the sweet potatoes for 5 minutes. Drain them and dry them with a clean dish towel. In a bowl, toss the fries with the mustard.
Mix the other ingredients in a bowl, and toss the sweet potato fries in the mix.
Spread the fries on a baking sheet covered with parchment paper and bake for 30 minutes, until they're golden brown. Toss the fries halfway through cooking time.
