Sweet Potato Bites with Guacamole and Almond Salsa

Colourful and yummy sweet-potato bites that you and your kids will love. Perfect finger food for when you invite friends over or to bring to a potluck!
Ingredients

2 medium sized sweet potatoes

1/2 tsp ground cumin seeds

1/2 tsp paprika

1/2 tsp sea salt

2 tbsp PRANA organic coconut oil

1/4 cup PRANA organic raw European almonds

10 medium size cherry tomatoes

1/4 of a red bell pepper

1/4 cup pitted Kalamata olives

2 green onions

1 tbsp extra-virgin olive oil

2 tbsp lemon juice

A pinch of sea salt

1 large avocado

1/2 small garlic clove

1 tbsp of extra-virgin olive oil

1/4 cup lemon juice

Directions
Sweet Potato Chips
Preheat the oven to 350°F (180°C).
Melt the coconut oil. Slice the sweet potatoes crosswise, about half a centimetre thick, leaving the skin. Put them a large bowl and add the cumin, paprika, liquid coconut oil and sea salt and mix well.
Evenly place the sweet potato slices on a baking sheet lined with parchment paper. Bake for 30 minutes, then turn the oven to 'broil' and grill the potatoes 1-2 minutes on each side until they are golden brown, making sure not to burn them! Let cool.
While the potatoes are cooking, prepare the salsa and guacamole.
Arrange the roasted potato slices on a nice wooden board or plate. Add a dollop of guacamole on each slice and top with the almond salsa. Garnish with fresh chopped cilantro.
Almond Salsa
Soak the almonds overnight. In the morning, rinse, drain, peel and chop the almonds coarsely and set aside.
Dice the cherry tomatoes and red pepper.
Chop the olives and slice the green onions.
Put all the ingredients into a small bowl, add olive oil, lemon juice, salt and pepper. Mix well.
Guacamole
Finely grate the garlic.
Put the avocado flesh in a bowl and add the remaining ingredients.
Mash with a fork to mix, making sure to keep big chunks of avocado for texture.
Adjust seasoning to taste.
