Rustic Mashed Potatoes with Pesto and Grilled Nuts

Make mashed potatoes the star of your holiday meal with this recipe made creamy by a cashew sauce. Throw in some pesto and grilled nuts and you've got a hit!
Ingredients

1/2 cup PRANA organic non-roasted cashews

1/2 cup water One garlic clove

A pinch of sea salt and pepper

3 sprigs chive

6 golden or russet potatoes

1/4 cup pine nuts

1/4 cup PRANA organic raw European almonds

1/4 cup sunflower seeds

1 tbs vegetable oil
-
1 tsp smoked paprika
-
A pinch of sea salt and pepper

1/4 cup pesto
Directions
Soak the cashews overnight or for at least 4 hours. Once soaked, rinse and drain.
In a blender, mix the cashews with 1/4 cup of water and blend until smooth and creamy. Add salt, pepper, a grated clove of garlic and the chives.
Preheat the oven to 400°F (205°C). Bake the potatoes, wrapped in aluminum foil for 30 minutes, or boil them until tender. We recommend baking them for a richer taste.
In a blender, or in a bowl with a fork, mash the potatoes while adding the cashew cream. Adjust seasoning by adding salt and pepper. You can also adjust the consistency to your liking by adding more cashew cream.
Toss the nuts in some olive oil and roast them in a small casserole. Add the smoked paprika, salt and pepper.
Serve the mash topped with pesto and garnished with grilled nuts.
