Ingredients

200 g spaghetti

2 tbsp olive oil

2 cups squash, diced

2 or 3 cloves garlic, finely minced

1 tsp chili powder

sea salt and fresh ground pepper, to taste

1/2 lemon, zest and juice of

2 cups fresh spinach

1/2 cup PRANA organic raw walnuts , coarsely chopped
Directions
Preheat the oven to 400 ° F(205 ° C) and line a baking sheet with parchment paper.
In a large bowl, mix the squash, olive oil, and season with salt and pepper. Mix well
Spread on the prepared baking sheet and place in preheated oven to bake for 20 minutes.
Cook the pasta according to package directions until al dente .Drain and transfer to a bowl. Toss with a drizzle of olive oil and set aside
In a large frying pan, heat up 1 tbsp olive oil and add the garlic, chili powder and walnuts. Brown over low heat for a few minutes, stirring frequently.
Add the squash and stir gently.
Add the spaghetti and the spinach, and mix.
Season with salt and pepper. Drizzle with the lemon juice and zest. Serve immediately.
