15 Medjool dates, pitted

½ cup tahini

¼ cup vegan butter

¾ cup pecans, chopped

125 g dark chocolate

1 tablespoon coconut oil
Directions
Lightly grease a 20cm (8-inch) square baking dish and line it with parchment paper for easy removal.
Open each date and place them, cut side down, across the bottom of the prepared dish, covering the surface. Press down gently with your fingers or a small utensil to create a compact, even layer without any gaps. Set aside.
In a bowl, blend the tahini with the melted vegan butter until well mixed. Let the mixture cool for about 10 minutes until it thickens slightly. Pour this tahini blend over the pressed dates, spreading it out evenly.
Scatter the chopped pecans on top of the tahini layer. Place the dish in the freezer for 1 hour, or until firm.
In a heatproof bowl, gently melt the dark chocolate along with the coconut oil, stirring until smooth. Pour the melted chocolate over the pecan layer, using a spoon to spread it evenly. If desired, sprinkle with a pinch of sea salt flakes for added flavor.
Return the dish to the freezer for another 30 minutes, allowing the chocolate to set completely.
