These banana and dark chocolate muffins are taken to the next level with a crunchy topping of Granolove chocolate chip granola. Soft and fluffy on the inside, with a delicious crispy exterior, they make the perfect breakfast or snack. Give them a try and indulge in every bite!
Ingredients

2 bananas

1 cup soy milk (250 mL)

2 tbsp oil

2 tbsp apple cider vinegar

¼ cup maple syrup (65 mL)

1 tsp baking soda

1 tsp baking powder

1 ½ cups flour (225 g)

⅓ cup dark chocolate chunks (70%)

½ cup GRANOLOVE GOURMET – Choco-Chips Cookie Crunch Granola
Directions
Preheat the oven to 350°F (180°C).
Mash one banana in a large bowl.
Add the soy milk, oil, vinegar, and maple syrup, then whisk until smooth.
Stir in the baking soda and baking powder, whisking to combine.
Gradually add the flour, stirring just until mixed.
Dice the second banana and fold it into the batter with the chocolate chunks.
Spoon the batter into greased or paper-lined muffin molds.
Sprinkle Granolove on top of each muffin and bake for 40 minutes until golden!
