This is a classic chia pudding with all the delicious flavours of autumn. Pumpkin is just as good in savoury dishes as it is in desserts. For an even richer pudding, try topping with some of our signature maple-coated nuts, Go Nuts and Amandine. Extra tip: keep cubed pumpkin in a bag in the freezer. It'll then be quick and easy to grab some, steam and purée to have pumpkin anytime you need it!
Ingredients

1/2 cup diced cooked pumpkin or pumpkin purée

2 PRANA organic Medjool dates, pitted

1/2 tsp PRANA organic fair trade ground Ceylon true cinnamon

1/4 tsp ground cardamom

1/2 tsp ground vanilla or vanilla extract

1 1/2 cup homemade almond milk

2 tbsp PRANA organic white chia seeds

Toppings: diced pears, PRANA organic raw European pumpkin seeds, etc.
Directions
In a high-speed blender, mix the pumpkin, dates, spices and almond milk.
Pour the chia seeds into a Mason jar and add the pumpkin mix. Seal tightly and shake vigorously. Let sit for a few minutes and shake again.
Chill for 30 minutes to 1 hour.
Garnish with the toppings of your choice.
