We can't get enough chia pudding. And, when they're in season, we can't get enough fresh, local blueberries either - and so: blueberry chia pudding! This fruits in this recipe can be switched up according to what's in season - try it with raspberries or strawberries instead. Ingredients

2 cups homemade almond milk, divided

3 tbsp PRANA organic whole black Proactivchia seeds

1 to 2 tbsp maple syrup

1 1/2 cup frozen blueberries

1 banana

1/2 tsp vanilla extract

Fresh blueberries, to garnish
Directions
In a Mason jar, mix 1 cup of almond milk, chia seeds and maple syrup. Shake for one minute and let set for 30 minutes, until the chia seeds have puffed up.
While the chia pudding is setting, prepare the blueberry smoothie. Add the blueberries, banana, the remaining cup of almond milk and vanilla to your blender and mix until smooth and creamy.
Once the chia pudding is ready, pour into ramekins until halfway full. Top with the blueberry smoothie and gently swirl the two together. Garnish with fresh blueberries.
