The mousse is accompanied by a delightful chia seed jam, a great alternative to store-bought jams that are often full of sugar. Quick to prepare, it requires no cooking, which means the chia seeds retain all of their nutritional value. This recipe can be tweaked in an infinite number of ways simply by changing up the fruits used or by adding different spices. Why not try making an apple-cinnamon jam, or one with mango and turmeric? 2 cups almond milk, preferably homemade

½ cup maple syrup

1 tbsp agar-agar flakes, well-packed

1 ½ cups PRANA organic chocolate chunks, 70% cacao

1 tsp vanilla extract or vanilla powder

¼ tsp sea salt

½ cup PRANA organic hazelnut butter

3 tbsp PRANA organic whole black ProactivChia seeds

¼ cup maple syrup

2 cups frozen berries, thawed

Directions
Mousse
Pour almond milk in a small saucepan. Add maple syrup and agar-agar flakes. Bring to a boil while whisking. Reduce heat to a simmer and continue stirring for 5 minutes, or until the agar-agar is completely dissolved.
Remove saucepan from heat, add chocolate, vanilla, salt and hazelnut butter. Mix until smooth and creamy.
Transfer cream to a blender and mix for a few seconds to obtain a fluffier texture.
Pour into small resealable jars and refrigerate at least 4 hours. Before serving, garnish the chocolate-hazelnut mousse with ProactivChia Berry Jam.
ProactivChia Berry Jam
In a bowl, mix ProactivChia and maple syrup, then let stand a few minutes. Mash fruit with a fork. For a smoother jam, blend fruit in a food processor.
Pour fruit into the bowl of ProactivChia and maple syrup, stir and chill for 2 hours in the refrigerator so chia can form a jelly.
