If you're tired of your regular veggie burger recipe, give this one a try. It's a delightful mix of tasty ingredients: walnuts (use the nut of your choice), oats, spices, black beans and quinoa. When you want a veggie burger that's nutritious, protein-rich and easy to prepare, these black bean burgers are a great choice. They are extra tasty thanks to the combination of walnuts, black beans and quinoa, and have a great texture that won't crumble or get soggy like other homemade veggie burgers. Prepare the patties ahead of time and freeze them between two sheets of parchment paper for a quick meal on weekday evenings, when you don't feel like making a meal from scratch. Burgers are always a hit - especially when they come with a side of extra-crispy sweet potato fries!

1/2 cup PRANA organic raw walnuts

2 tbsp tomato paste

1/2 tsp PRANA unrefined Algarve sea salt

1 clove garlic

2 tbsp Dijon mustard

1 tbsp tamari or soy sauce

1/2 tsp liquid smoke

2 1/3 cups black beans, rinsed and drained

1/2 cup PRANA organic white quinoa, cooked

1 tsp PRANA organic coconut oil, melted

1/2 cup onion, finely chopped
Directions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a small frying pan, lightly toast the walnuts. Let cool for several minutes before coarsely chopping them.
Put the walnuts, oats, tomato paste, salt, garlic, mustard, tamari and liquid smoke in a food processor. Mix until just combined.
Add half the black beans and half the cooked quinoa, and mix for another few seconds. Transfer to a large bowl and set aside.
In a medium frying pan, heat the oil and brown the chopped onion for 5 minutes. Add the mix from the food processor plus the remaining quinoa and beans. Mix with a spatula.
Make each patty using 1/2 cup of the mixture. Place on prepared baking sheet. Let cool for at least 1 hour in the refrigerator.
Heat a drizzle of vegetable oil in a large nonstick frying pan and brown the burgers for 3 to 4 minutes on each side.
Delicately transfer them back to the baking sheet. Place in preheated oven and bake for 15 minutes.
Garnish burger buns with your preferred toppings (lettuce, tomatoes, pickles, avocado) and add the patty.
